Traditional Nepali tea made in a home kitchen. Raja's Chai recipe was created generations ago in a small village at the foothills of the Himalayas. It is prepared with a mix of spices that make this drink both delicious and healing and results in a complex yet comforting drink. One of our passions is to bring the Nepali culture to America and drinking chai with friends and family is one of the most common and enjoyable customs.
Ingredients: Black tea, ginger, green cardamom, black cardamom, cloves, bay leaf, cinnamon, black pepper, coconut powder.
Directions for about two mugs (or 4 cups) of chai:
Add 1 Tablespoon of blend to 3 cups of water. Bring to a slow boil for 2-3 minutes. Add sugar to taste, and then about 1 cup of milk(or to taste) & let the milk rise to a froth(but make sure it doesn't boil over). Use a ladle & filter to strain it into mugs. Enjoy!
For a healthier version:
Use coconut, almond or soy milk and a sugar alternative such as honey, maple sugar or stevia. They all make a difference taste so you have to experiment.
